It’s a full moon on Sunday – a good excuse to raise a glass. We’ve had our cocktail shaker out and have invented a little something fruity with July in mind. Enjoy...

Moonberry Cocktail
(enough for 2)

a good handful of fresh raspberries 
1/2 lime cut into wedges
6 mint leaves
3 measures of Mount Gay Aged Rum
agave syrup to taste
soda water 
ice cubes

  • Crush the raspberries & mint leaves in the bottom of the shaker with a muddler (or the handle of wooden spoon!)
  • add a splash of the soda to help loosen things up
  • Add in your ice cubes
  • pour over the rum
  • squeeze the juice from lime wedges in and then drop in the rinds
  • Give it all a good shake
  • Strain out into ice filled glasses and top with soda water

Serve. Delish
