So grab your apron, and get creative this week and put a smile on everyone’s face with these little cuties…
Ingredients:
100g soft butter
100g caster sugar
2 medium eggs
100g self-raising flour
2 heaped spoonfuls of cocoa powder
2 juicy oranges
1 Terry’s chocolate orange
Recipe:
- Heat the oven to 180c (350F, Gas Mark 4).
- Zest the oranges and put aside (for decoration)
- In a generous sized bowl, cream together the sugar and butter with a wooden spoon until smooth
- Beat the eggs in a small bowl then add slowly to the butter and sugar mix, beating as you go until it goes creamy and fluffy
- Sieve the flour and cocoa powder in to the bowl and with a metal spoon mix in a figure of 8 shape until it is blended in (go easy as you don’t want to knock the air out)
- Juice the oranges and add, stir gently to mix
- Add the mixture to a baking tray holding 12 cupcake cases
- Bake in the middle of the oven for around 15mins or until they bounce pack when pressed
- While they are cooking, tap and unwrap your chocolate orange (you need 3 segments per cupcake so no pinching)
- When the cakes are cooked, transfer them to a cooling rack and quickly put the three chocolate orange segments on top of each one (as they cool down the heat melts them perfectly)
- Keep a close eye for when the chocolate starts to melt – smooth over the top with a palette knife while they are still soft
- Sprinkle the orange zest over the top of each for an extra orangey hit
- Enjoy with a cuppa
