LAVENDER HONEY POSSET
This dessert sounds like summer itself don’t you think? We spotted it on recipe blog, theadventurebite.com and loved the fact it was described as ‘the easiest entertaining dessert you’ve never heard of’. We tried it and it lived up to expectations – simple to make with easy to get hold of ingredients. It makes the perfect end to a relaxed summer lunch with friends. Here goes…
INGREDIENTS (enough to serve 6-8)
4 cups of double or whipping cream
⅓ cup lemon juice
½ cup honey
4-5 lavender sprigs (wash thoroughly before using)
Juice of ½ lime (about 1 tablespoon juice)
INSTRUCTIONS
*Pour the cream in to a In a medium sized saucepan and warm over a medium-high heat.
*Add the honey and bring to a gentle boil for 3 minutes, stirring as you go. Boil for 3 full minutes stirring continually. Keep a close eye to ensure it doesn't boil over. Remove from the stove top.
*Add lemon and lime juice and stir to combine.
*Remove a few tiny flowers from the lavender (put aside to decorate) then drop in the rest of the lavender sprigs. Leave for 10-20 minutes (the longer you leave them the more intense the favour will be). Remove the springs and discard.
*Pour the mixture into ramekins and dress with the lavender flowers.
*Cover with clingfilm before popping to the fridge and leave to chill for at least 2 hours before serving.
