RUNNER BEANS

RUNNER BEANS

Lucky us. A green-fingered front just dropped round with us a gorgeous bundle of goodies harvested from their garden. Freshly picked and grown just a stones throw away, everything doesn’t just taste good, it also looks amazing. These runner beans were among the mix and their gorgeous shade of green caught our eye

Stacked full of fibre and loaded with vitamin A (good for healthy teeth, bones and skin) they are just what our body needs at this time of year as we stock up on essential nutrients and vitamins ahead of the winter months

According to veg king, Nigel Slater, a runner bean gets on particularly well then drizzled in a shallot butter.  Top and tail the beans, removing and thick ‘strings’ if needs be. Then cut the beans diagonally into one inch slices and steam for 3-4 minutes. At the same time gently fry two sliced shallots in a knob of butter. Add a tablespoon of white wine vinegar and a spoonful of brown sugar and fry until the shallot softens. Drain the beans and mix everything together. Serve while still piping hot

That’s tonight’s veg dish sorted then. Enjoy
