THE POTATO FIGHT BACK
It’s time for the humble potato to fight back. Frowned upon as the unhealthy member of the vegetable family – (it doesn’t even count as one of our five a day in the UK, though it does in the US) – it gets a hard time from the healthy eating crew.
True, chips with everything is a bad idea, but potatoes have lots of positives. One medium sized spud contains just 110 calories and is high in fibre so fills you up for ages. It also contains nearly half our daily value of vitamin C & other antioxidants (to help your skin cells fight back from damaging free-radicals). An average sized potato also contains more potassium than a banana and is loaded with magnesium (the sleepy mineral). Make sure you keep the skin on as that’s where all these goodies tend to hide
